ingredients --<br />
whole squid (cleaned)-- 3 nos.<br />
for stuffing--<br />
shrimp-- 60 gms(finely chopped)<br />
fish-- 80 gms (finely chopped)<br />
for sauce--<br />
mustard pasted-10 gms<br />
cooking cream --30 ml.<br />
broccoli few sprigs blanched one--for side of dish<br />
radish for garnish<br />
chop parsley.<br />
chop onion--1/2 teaspoon<br />
chop garlic--1/4 teaspoon<br />

method<br />
saute the onion in olive oil add garlic saute till the onion becomes brown. add this to chop seafood and mix well.make three equal portions of seafood and one part mix with turmeric pwd., one art with chop parsley and one part with red chilli pwd.<br />
<br />
stuffed this mixture into squid one by one. secure the end with tooth pick, and steam cook ins team .<br />
for sauce mix mustard paste with cooking cream and simmer it.<br />
plut the sauce on a plate spread it. place calamari by cutting equal portions of squid. put some brocoli and radish to look good. <br />

clean the fish, make mark criss cross, apply marination and leave for 30 minutes, cover with mango leaves.<br />

method:--- mix the rice flour with salted warm water and make a smooth dough, mince the fish with out any kin or bone. saute chop onion and green chili add minced fish and indian spices and few drops of lemon juice. add salt to taste.saute till fish cook. make small even size rice rounds, flatten it with palm of hand, place the fish mixer in center and close from all sides and make shape to balls. deep fry in hot oil. mean while saute sliced onion with ginger and green chili add little indian spices with salt to taste. add few drops of lemon juice.add fried fish rice balls in this and tossed , serve hot.<br />

One of the easiest dish to make.........<br />
<br />
for this you need----<br />
mackerel--1 no.(cleaned and cut in to 3 or 4 piece)<br />
ginger garlic paste-- 1/2 teaspoon<br />
salt to taste<br />
crushed black pepper-- 1/4 teaspoon<br />
for the tamarind sauce--<br />
tamarind pulp--1/2 tablespoon<br />
chop green chili-- 1 no.<br />
honey-- 1 teaspoon<br />
chop garlic-- 1/2 tea spoon<br />
chop onion-1 teaspoon<br />
chop springonion-- 1 teaspoon<br />
Method<br />
marinate the fish in ginger garlic paste with salt and crushed pepper. keep aside for 20 mintes in freezer.<br />
dust with little flour and deep fry in hot oil till it cook. meanwhile for the sauce-- saute onion and garlic till it turns light brown, add chop chili saute little more. add tamarind pulp little water bring to boil, season with salt, reduce in to half , add honey.. check the taste... it should taste little spicy, sour and sweet same time.<br />
<br />
arrange the fish in julienne of vegetables ( carrots, cabbage, and bell pepper) pour the sauce on top and serve along with steamed rice or steamed noodle.<br />
<br />
Note-- if Mackerel not available you can use any small fish.<br />

soak urad dal for 2 to 3 hours-- strain the water wash thoroughly and make a fine paste. heat the oil fry the urad dal dumplings --(make sure it has small size like pearl.) till golden brown in color. mean while boil the milk add sugar and reduce it till 3/4. add cardamom for flavoring. add dumpling and serve hot.<br />
n.b.-- it can serve cold also. in this case boil the milk with sugar and cardamom and let it cool. then add dumplings and serve cold. </div>

raw banana-- 1 no.<br />
raw mango -- 1/2<br />
pearl garlic-- 4 nos.<br />
green chili- 1no<br />
sliced onion-- 1/4 piece<br />
honey-- 2 teaspoon<br />
lemon juice-- 1/2 teaspoon<br />
salt-- to taste<br />
crushed black pepper-- optional<br />
leeks-- sliced --1 tespoon<br />

method--<br />
cut the raw banana baton size. dust with flour, and deep fried till crispy. cut the mango in julienne, peel the garlic and cut in two. chop green chili.-- saute sliced onion and garlic in cooking oil.add green chili and raw banana<br />
tossed little more. add honey, lemon juice.add raw mango. season with salt and for garnish add leeks.</div>

<b><u>fish roulade or fish roll-</u></b>--<br />

flatten the fish (here i used king or seer fish) as thin as possible. finely chop the shrimp and mix with sauteed chop garlic, onion, salt n pepper. place the stuffing one side of fish roll it. cover with aluminium foil and grill it till it cooked well. serve with blanched broccoli and toasted brown bread.<br />

<b><u>for garlic tomato sauc</u></b>e-- saute garlic till light brown add tomato sauce and season with salt n pepper.</div>
